Apple Walnut Salad - Vegan and GF Recipe

This gorgeous, fresh and wonderfully crunchy salad is completely satisfying on its own, or as a perfect side to quinoa patties or zucchini fritters. Yes, it's a Waldorf salad, but if I'd called it that you would have surely passed it by as old school. Don't do it! Just try it, you'll love it.


  • 1 C Celery, finely diced
  • 1 C Apples, tart or sweet-tart variety, diced
  • 1/2 C Walnuts, coarsely chopped (Pecans work well, too)
  • 1/2 C seedless Red Grapes, halved
  • 1/2 - 3/4 C Soy Mayo*
  • 1/2 tsp Lemon Juice


Combine all fruit, celery and walnuts. Gently fold in mayo and lemon juice. Store tightly closed in refrigerator.

* Dairy or egg based dressing options: substitute plain yogurt if you aren't feeding your vegan friends, or try regular/lite mayo combined with sour cream. Or try a simple vinaigrette with some bleu cheese or gorgonzola added.
