Goji - Mulberry Sweet Bread
A delicious, healthy sweet bread ideal for breakfast, with an afternoon cup of tea, or tied up with a little ribbon and given as a gift (hostess or otherwise). Baked the night before, it slices up nicely the next day and gives the flavors a chance to meld. Add a few chopped nuts to add some protein.
2 cups sifted all-purpose flour
1 cup coconut palm sugar (or white sugar)
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup butter
1 egg, beaten
1 teaspoon orange zest
3/4 cup orange juice
3/4 cup goji berries, softened in small quantity of warm water
3/4 cup white mulberries, softened in small quantity of warm water
Directions
- Preheat oven to 350 degrees F (175 degrees C). Spray or grease one 9x5x3 inch loaf pan.
- Whisk together the flour, sugar, baking powder, salt and baking soda.
- Cut in butter until mixture is crumbly. Add egg, orange peel, and orange juice; stir to mix and fold in goji berries and mulberries.
- Pour into loaf pan and bake for 60-70 minutes or until toothpick inserted comes out clean. Remove from pan; cool on wire rack.
