Your kiddos are sure to love this Irish-inspired minty green shake, especially if you tell them it has chocolate in it! And...if they have an issue with veggies, they'll never even taste the spinach! I prefer to use full-fat coconut milk in this smoothie because the fat promotes absorption of the important fat-soluble vitamins. In fact, if you don't use the coconut milk, make sure to add some fat to this recipe, such as coconut oil, avocado, or avocado oil.Â
I N G R E D I E N T S
Serves 1
1 overripe banana – the browner the better! Frozen is ideal, but fresh will work.
2 tsp cacao nibs or chocolate chips
1/8 to ¼ tsp pure peppermint extract, to taste (no imitation)
Up to 1 cup milk of choice. For a rich, filling shake, use full-fat canned coconut milk
½ cup spinach (frozen or fresh)

Blend all ingredients until completely smooth. Adjust milk quantity based on desired thickness. If you don't use full-fat coconut milk, add a little bit of another type of fat into the smoothie in order to promote absorption of the fat-soluble vitamins. You can use a teaspoon of coconut oil, some avocado, or avocado oil (which doesn't add any flavor).Â
