St. Paddy's Dark Chocolate Peppermints {Paleo}

Happy St. Patrick's Day! The best treats are the ones that nourish the body. Coconut contains medium chain fatty acids which are easily digested and quickly converted to usable energy.

I N G R E D I E N T S

  • 2 cups coconut oil, room temp
  • 1/2 C honey, or to taste
  • 1 tsp peppermint extract
  • 3 dark chocolate bars, minimum 72% cacao
  • 1/2 cup coconut oil, melted

D I R E C T I O N S

1. In a bowl, mix the 2 cups of coconut oil, honey, and peppermint extract.

2. Form patties out of the mixture and place on a plate lined with parchment paper. Place in freezer to harden.

3. While waiting, melt the chocolate bars and 1/2 cup coconut oil over medium low heat in a saucepan. Remove from heat to cool for 5-10 minutes.

4. Dip the hardened patties in the chocolate until covered and place back on the plate. Place in the freezer until the chocolate has hardened.
