Blood Orange Kale Salad Recipe

This simple salad comes together quickly but makes a beautiful statement. Beautiful colors and robust flavors make this salad a winner. Add a little crumbled goat cheese if you like.

Ingredients:

1 bunch young kale from your local farmer's market

1 blood orange, peeled, then sliced

2 T dried cranberries

2 T sliced or chopped almonds

Balsamic vinegar and olive oil to lightly dress

Pink salt & freshly ground pepper to taste

Directions:

Wash and spin dry baby kale, then chop. Lightly dress with vinegar and oil, then either separate onto individual plates or add to salad bowl and arrange other ingredients on top.
